Cocktail: The Bomb Pop

I’m pretty sure I know the answer to this, but does anyone else remember the insane excitement upon hearing the jingle of the ice cream man coming down the street? Ok, how about this one – what was your favorite thing to order? I had two favorites – the chocolate bar with the crunchy thingies and The Bomb Pop. So hard to decide! Chocolate or fresh and fruity? More often than not, the Bomb Pop won out. The stifling Indiana humidity has a way of making you crave refreshment, hahahaha!

I’ve seen versions this cocktail floating around on Pinterest for a while now – mostly in shot form – and decided I had to make it. Cherry juice, limeade and a bottle of blue raspberry vodka later (not the whole thing! geez – what do you take me for?!), this cocktail came to be. Crushed ice makes it even more fun – like an adult slushy!

Put 1 oz. tart cherry juice in the bottom of a glass. Fill the rest of the glass with crushed ice. Pour 2-3 oz. limeade (the original middle flavor – however, lemonade can be used instead) over the ice to create the middle layer. Top with 1-2 oz UV blue raspberry vodka. Ka-pow!

For an alcohol free version, use double strength blue raspberry Kool-Aid for the top layer instead of the vodka.

For a quicker kids drink, use an actual popsicle as a substitute for ice in lemonade or lemon-lime soda pop. Hahaha, or turn this one into another grown-up cocktail and sub out the soda for champagne! ;-)
